Apr. 30th, 2008 09:27 amRandom Statement 1: Am I seriously the last person to know that both David Archuleta and Brooke White are both Mormon? (See, I don't care about AI. Because Carly is gone. I pretty much watched her and Hot Aussie dude. They're both gone = I'm gone. Also, I can't stand bland pop songs.) And it's no wonder that they're both who I consider the most boring performers on the show. Connection? YES.
Random Statement 2: For anyone that didn't see my post yesterday, I'm moving (slowly but surely) all of my Mormon posts (and new ones) to

Random Statement 5: I have lots to say about some of the new stuff coming out about the YFZ Ranch and this article (unrelated) but I'm putting it over in the other place when I get it all tidied up. In case someone wondered if I knew about that girl giving birth, etc. Yep.
Now for food! (And if you have yummy Thai/Malaysian recipes, GIMMIE!!)
Strawberries With Balsamic Syrup And Biscuits
Filling:
1/3 C balsamic vinegar
1/3 C water
1 C sugar
1/2 tsp vanilla
8 oz. fresh strawberries, washed, trimmed, sliced
In sauce pan, combine all ingredients except strawberries and heat over medium-low until boiling, stirring often. Reduce hear and simmer for 15 minutes, stirring occasionally. [type that without an ass - there is no ass in occasion] Add strawberries and simmer for 5 minutes. Stir, remove from heat and cool to room temperature.
Biscuits:
1 1/2 C all purpose flour
1/2 tsp salt
2 tsp sugar
1/2 tsp baking soda
1 stick unsalted butter, cut into small pieces and COLD
1/2 C milk
Preheat oven to 400, line cookie sheet with parchment paper. Into large bowl, sift flour, salt, sugar, baking powder and baking soda together. Add cold pieces of butter. Use hands to squeeze mixture together into small balls. It will not look even or well blended.
Add milk and work with hands. It should look like a barely held together mess, not a smooth ball. Cover bowl and set in refrigerator for 15 minutes. [note: make syrup at this point - I like it slightly warm]
Roll out dough on a lightly floured surface and cut into 3 inch biscuits, dipping the cutter into flour between each. Place 2 inches apart on sheet, bake 8-10 minutes or until golden. Remove to rack and cool. Split in half on plate and toss some of the strawberries and syrup [and a dollop of creme fraiche or whipped cream. YUM.]
Banana Flaxseed Bread
1 C all purpose flour
1/2 C milled flaxseed
1/2 C whole-wheat flour
1/2 C sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/4 C fat-free skim milk [did you read the latest study that says calcium keeps your body from absorbing most bad fats? Awesome. Carry on.]
1/4 C canola oil
2 egg whites [give Sally the yolks - pretty doggy coat!]
1 whole egg
1 tsp vanilla
1 1/4 C mashed very ripe bananas [I go overboard and use 4, not the rec. 3]
1/3 C chopped and toasted walnuts or pecans <-- yes, please
4 tsp flaxseeds
Preheat oven to 350.
Combine first 8 ingredients (to salt) in a large bowl. In small bowl, whisk milk, oil, whites, whole egg and vanilla. Pour this into dry ingredients and stir until blended. [Use Alton Brown's muffin method!] Stir in bananas, walnuts, and 3 tsp. of flaxseeds, blending until just moistened. ["Then just... walk away. Just do it." This is when you grease up a loaf pan.]
Spoon into greased loaf pan (9x5) Sprinkle the top with the remaining flax seeds. Bake for 55 to 60 minutes or until browned and clean toothpick test. Allow to stand in the pan for 10 minutes, then move to wire rack to cool completely.
[High in fat, but it's the good kind. Plus, loads of protein and fiber, so... Win/win.]
heavens help me, but I've outlined a fic about two mormon missionaries getting it on based on the Mormon Missionary calender. Just... so... porny!! Well, I've always claimed to be broken inside. I've been wondering for weeks whether David Archuleta's father met his mom while on mission. I think you've said in the past that such a situation would be unusual, because they're so monitored while on mission, but...I'm so curious! Because the dad is the type that wears a trucker hat to every performance, and I just wonder if he would be traveling to Honduras on his own.

There was something Naomi Judd said about the Junior STar Search competition that David won as a kid, about the dad, uh, withholding drinks of water from D.A. to get him to perform better? Of course the dad denies all this.
You might want to poke around for that, if you have any interest in it. And sure, take with a grain of salt that Naomi Judd knows from coercive stage parenting...

(northern Thai version)
Ingredients:
1 small tin Coconut Cream
1 large tin Coconut Milk
1-2 tspns minced garlic (to taste)
4-5 leaves from a citrus tree
2-3 bay leaves
3 small bunches of coriander
1-2 tblspns Thai Green Curry Paste (3 tblspns will be very hot)
500g skinless chicken breast
1 small can bamboo shoots (sliced)
1/2 tblspn fish sauce
2 limes
2 tblspns brown sugar
a red capsicum ("pepper" for Yanks), sliced thinly
2 cups snow peas
4-5 cups whole basil leaves
2 tspn minced basil
1 lge bunch of broccoli or other greens
1. Very finely chop the coriander roots and stems (not the leaves). Peel 4 strips of lime rind. Put the coconut cream, garlic, citrus leaves, bay leaves, coriander and lime rind into a wok. Fry on a medium to high heat until the coconut cream begins to separate (may not if low quality). Roughly chop the coriander leaves meanwhile and set aside for a garnish.
2. Add Thai Green Curry Paste and stir fry for about a minute.
3. Add the chicken, sliced into bite size pieces and strips, to the mixture and stir fry for 2-3 minutes, stirring continuously.
4. Add bamboo shoots, fish sauce, juice of the limes and sugar along with the Coconut Milk. Lower to medium heat. Continue to cook, stirring continuously for about 5 minutes.
5. Add whole basil leaves (leaves only), capsicum and snow peas. Add 2 cups of water and the minced basil.
6. Bring to a low simmer and reduce heat. Simmer for approximately 30 minutes, adding water if needed. The curry should be soup-like in consistency, not paste-like as is more traditional.
7. As the rice goes on the boil to cook, place the broccoli as a layer on top of the curry without stirring it in and cover to steam it. By the time the rice is cooked the broccoli should be just al dente. Stir into the curry. Serve with the coriander leaves as a garnish.

Serves 2 people
Ingredients:
1 large crown of Broccoli
1 tblspn Extra virgin Olive Oil
1 tspn minced Garlic
2 tblspns Pine Nuts (toasted in a dry pan on medium heat)
1½ tblspns Raisins (chopped finely)
¼ cup Vegetable stock
1 tspn Saffron strands (or equivalent powder)
½ - 1 tspn minced Chilli
½ tblspn extra Oil
cracked Black Pepper to taste
grated Parmesan Cheese to taste
sufficient Pasta for 2 people.
Steps:
1. Chop off the florets of the Broccoli and discard the remainder. Boil or steam until fully soft but not fading in colour. Immediately plunge into a bowl of iced water. This preserves the colour.
2. In a saucepan, briefly fry the garlic in the oil till soft. Add the Broccoli and mash it to a paste on a low heat. Meanwhile add the stock to the Saffron.
3. Remove from heat. Add the toasted Pine Nuts and Raisins and toss through. Add the saffron, stock and the Chilli to the sauce and stir in. Set this sauce aside to be re-heated just before serving.
4. Cook the Pasta. While it is cooking, fry the Bread Crumbs in the extra Oil.
5. Serve the Pasta with the sauce. Top it with the bread crumbs, cracked Pepper and grated Parmesan Cheese.
