Jun. 19th, 2008 03:30 pmIt's official: the ceviche recipe from yesterday was GLORIOUS. I'm eating some leftovers right now. Only thing I'd tweak for my own tastes is have less cilantro (bleh) and add another tomato or two. There's so little jalapeño in it that the kids didn't notice, and it was a thumbs up with them.
I want to record some recipes before I forget. All yummy hot-weather recipes.
GREEN BEANS WITH PEANUT GINGER DRESSING
Flash boil 2 lbs green beans until fork tender, plunge into ice bath, drain, refrigerate.
In food processor, pulse 1 c dry-roasted, unsalted peanuts until coarsely chopped. Reserve 1/3 C. Continue pulsing remainder until fine. Add 3 TBSP rice wine vinegar, 1 (1 inch) piece of ginger (peeled, coarsely chopped), 1 garlic clove, 2 TBSP soy sauce, 1 TBSP granulated sugar, 2 TBSP veggie oil, 1 TSP salt, 2 TBSP hot water.
Blend until almost smooth, scraping sides of bowl often.
Toss green beans with dressing, sprinkle reserve peanuts on top right before serving. 6 generous servings.
HERBED PORK AND CORN SALAD
1 lb. leftover cooked pork roast (or tenderloin) cut into 1/2 in cubes
2 to 2 1/2 C leftover cooked corn (grilled ears taste better)
1 1/2 C diced tomatoes
1 TBSP minced fresh parsley
1 TBSP chopped fresh basil
Vinaigrette (follows)
leaf lettuce
In large bowl, stir together pork, corn, tomatoes, parsley, and basil. Pour vinaigrette over all, toss gently to coat. Spoon onto lettuce leaves, serve. 6 servings.
Vinaigrette
Mix together 1 TBSP corn starch and 1/4 C water, set aside. In a small saucepan, bring 3/4 C water to boil, stir in cornstarch mix. Cook and stir on medium for 3 min. or until thickened. Remove from heat and cool completely. Stir in 1 TSP Dijon mustard, 2 cloves minced garlic, 1/2 C red wine vinegar and 1 TBSP olive oil.
WATERMELON MARGARITAS Hello!
1 (4 pound) seedless watermelon, sliced into 2 inch cubes - 8 cups
1 1/2 C good quality silver tequila (you should know by now what I recommend. If you can't get that, then get silver Patron.)
1/4 C Cointreau (or other orange liquor. Could use triple sec)
1 C fresh lime juice
crushed ice
Place watermelon in blender and puree until smooth. Combine watermelon juice, tequila, Cointreau, and lime juice in a large pitcher and add crushed ice. Makes 8 Stoney-sized drinks, 10 - 12 in fru fru margarita glasses. :D
I'm going to taste test a new cocktail called "The Jack Ruby" that Fearings created. If it's good, I'll post that recipe. (It's essentially a vodka lemonade with watermelon ice cubes with a special syrup for more flavor kick.)
Man, a cheesy tomato pie sounds good for dinner. Hurry up and fruit, my tomato plants!

1 small tomato, quartered
3/4 cup tomato juice cocktail, chilled
2 Tbsp. minced fresh cilantro leaves (I use FAR less of this)
1 small garlic clove, chopped
1/4 jalapeño pepper (or to taste), chopped
1/4 tsp. ground cumin
Juice of 1/2 fresh lime (about 1 Tbsp.)
Small wedge of fresh lime and a cherry tomato for garnish (optional)
1. Freeze tomato in a plastic bag until hard, about 3 to 4 hours. (They will keep up to one week. Several tomatoes may be frozen at a time.)
2. Place frozen tomato, juice, cilantro, garlic, jalapeño, cumin and lime juice in a blender. Purée until well blended and almost smooth.
3. Pour into a tall tumbler filled with ice cubes. Garnish, if desired, with a small wedge of lime and a cherry tomato, speared on a short skewer and added to the glass like a swizzle stick. Serve immediately.
Makes 1 serving. (Recipe can be multiplied to make more servings, but you may want to cut down on garlic and jalpeno if you do.)
