That subject header is the most ungrammatical thing I may have ever written. I'M SORRY BUT THESE COOKIES ARE TOO GOOD. I tweaked the original recipe, and think it's pretty boss. Under the cut, and understand that if you make these, you're going to need a moment in your bunk.



This made 22 for us, and they're pretty good-sized cookies. But why would you want a little one?

Nutella Lava Cookies

Ingredients:
1 C (two sticks) of butter, softened - unsalted butter, pls (butter pls.)
1 1/4 C sugar
2 large aigs (that's country for eggs)
1/2 C unsweetened cocoa powder (I used good ol' Hershey instead of my Ghiradelli)
2 1/4 C all-purpose flour
1/4 tsp salt
1 tsp baking powder (I used 1/2 I just realized. OOPS.)
1 1/2 C semi-sweet chocolate chips
1/2 tsp vanilla
1/4 C Nutella, plus more for filling

Preheat oven to 350F.

Combine the flour, salt and baking powder in small bowl, set aside.

Cream sugar and butter until light yellow and fluffy, add in aigs one at a time and mix well, then add the cocoa on low speed. Scrape down sides as needed and mix in the 1/4 C Nutella and vanilla.

Slowly add in the dry to the wet, scraping down the sides as needed and mix until JUST MIXED IN. Never over work your cookies! Think of them like you in a fantasy land where you don't have to work hard. Gentle, loving strokes. I'm sorry, I'm just on a high.

WITH A SPOON: add in the chocolate chips.

Line cookie sheets with parchment paper. Spoon out about 2 TBSP of dough, roll into a ball. Mash a divot in the middle to make a little pouch and spoon in a drizzle of Nutella in there (about 1 tsp. worth, I'd say) Seal up the pouch and place on cookie sheet, keeping them about 2 inches apart. (I got 8 on each sheet.)

Bake for 13 - 16 minutes. Let cool on the sheet for a minute, then slide onto a cooling rack and eat as soon as you can. NOM.

NOTE: I made all the filled balls at one time and kept them chilled. I bet you could make a batch and freeze them, pulling a few out at a time when needed.


I am so happy right now, I can't stand myself. OH! AND A GLASS OF MILK IS A MUST. Oooh, are they rich and fine. Wonderful flavor, soft and the tiniest bit gooey. <3

sadly we don't do Nutella at my house because the kidlets are allergic to nuts. I will have to (oh so sad) substitute homemade truffle centers for the Nutella to try these.
