Because that's what I've been eating almost all weekend. Mmmm, avocados. Fresh tomatoes, garlic from the garden... And I made some baked taquitos that are so good, oh man. We were celebrating the Mr's promotion this weekend by being lazy slugs and eating. <-- THE AMERICAN DREAM.

[livejournal.com profile] crazydiamondsue had some problems last night (nothing to worry about, just time consuming, etc.) that is going to keep her from putting up her True Blood recap until this evening. But trust me when I say you're going to want to read it, if only for her take on the ridiculous Hot Shot happenings. Not to mention Vienna Sausage appe-teasers.

And the Real Housewives of New Jersey recap is now online, here you are. (Oh my god, the sparkle suit on that gorilla.) Kim G returns. She is SO AWFUL. I love watching her awfulness, I won't lie.

Tonight is Hoarders, and I've already begun my home cleanse in preparation.

For those that might want to try my baked taquitos, the recipe is under the cut.

3 cooked seasoned chicken breasts (big ones) and shredded
1 small container of Mascarpone cheese (or half a package of Nuefchatel/Cream cheese)
1 1/2 C shredded cheese, like Monterrey Jack
1/3 C salsa verde
(seasonings for the chicken: cumin, garlic, chili powder, salt and pepper. Then you don't have to season the cheese. BRILLIANT.)

1 pkg. corn tortillas
cooking spray

Heat over to 425F. Spray a jelly pan (or 9x13 dish) with spray. Mix the cheeses and salsa together, add in the shredded seasoned chicken. Get a hot towel on your work station, and wet a paper towel. Working three at a time, wrap the wet towel around the three tortillas, microwave for 20 seconds, transfer to the hot towel to keep them pliable. (Get a helper, it's much faster.) Put the tortilla in your hand, scoop a bunch of the chicken mix onto it, roll up the tortilla like a tube. (You need to mash and flatten the chicken into a line.) Roll it up tight, put on the baking sheet seam side down.

Do this until you run out of stuff. I got about... 24? I can't remember how many tortillas were in my package,the kids ate one or two. I had just over 20 finished ones. Spritz the top of the rolled tortillas with cooking spray, pop in the oven for about 18 minutes. Watch for the filling to bubble and the tortillas to crisp up and brown on the edges.

NOM with sour cream, guac, and or salsa.

We made a second batch and cheated: instead of the cheese/salsa combo, we had some spicy southwestern ranch dip (Marzetti's) and mixed that with a little shredded cheese and the chicken. Way more fattening, but super tasty. Um, and a lot faster to prep, too.

I LIKE FOOD.

I still have some leftovers, so instead of teaching the kids how to cook tonight, we're going to make cookies. Tomorrow we're making Indian food, because I want some palak paneer (paneer is fun to make) and some naan and dal. YUM.

It is a million degrees out, so I'm waiting for it to be a reasonable hour for me to have a margarita and float in the pool with it. I say 4 is a good time. Right? Hmm. (Hahaha, I sound like a lush.)

Speaking of being a lush, those of you that have been following my Glee recaps have gotten some pretty boss cocktail recipes. I made the Friday cocktail (The Dirty Hippie) a few times this weekend. Tie dyed cocktails that taste good? OK. I changed up the way you can search on the main page - the shows/movies/books are clearly listed at the top with hyperlinks. Hopefully that looks far less cluttered.

I had palak paneer at lunch today. Yuuuuuuuuuuuuuuuum. OMG it was so good.

Those taquitos sound really yummy.

Also, I think I want to come live at your house, because I would happily live on guacamole for a weekend. Or longer.

YUM, that is one of my all time faves, I could eat my weight in it.

We have fun at my house, re: foodwise. I LIKE FOOD. Oh man, the avocados are massive and delicious right now, they demand to be turned into guacamole! So simple, so delicious.

We had Indian for lunch and small batch local ice cream after the museling got out of school, and despite my stomach being very full I still have a craving for guacamole now, because avocados are DIVINE.

IIIIIIICE CREAAAAAM. Yum. I have supplies to make some, we're doing that later this week. Nothing like fresh ice cream. (What flavor did you get? *chinfists*)

Avocados are a miracle fruit. I HEART THEM. Little salt, little minced garlic, they need nothing else. Except for a little fresh tomato. Maybe some lime. But that's it. (And that's my guac recipe, hahaha)

That guac recipe sounds like perfection, yes. Simple guac is better.

Today I had chocolate ice cream with a peanut butter swirl (known there as muddy river), but I really should have gotten an ice cream soda (chocolate syrup, vanilla ice cream). The ice cream was very good, but it's burning hot here and the soda would have been PERFECTION.

Tell me about your favorite ice cream flavor! *chinfists right back*

I waited tables in college when I lived in Utah. They had "fajitas" on the recipe (cooked meat and veggies. Um, there's more to it.) They had guac that they made and no one would eat. BECAUSE THEY PUT MAYONNAISE IN IT. *throws up*

Avocados, 2! Tomato diced, 1! 2 cloves of garlic, minced! Salt to taste! Juice of one small lime! THAT IS ALL. Maybe add in some red onion, which I don't care for, but is normal to eat here. Or cilantro (also, I do not add.)

OOOOH, peanut butter ice cream! I've not had that in ages. We're going to make Nutella ice cream this week. <-- redonk. SO. GOOD. Mmm, ice cream sodas. Or an egg cream! I like those a lot.

I think I love a good French vanilla bean best of all - it's so simple and delicious. But. Cinnamon ice cream with gingersnaps? make those into ice cream sandwiches? OMG. Otherwise, a lovely Dutch chocolate. I am boring. Some might say purist. (lol.)

And thanks! I am quite proud of him. :)

Mmm, egg creams. My parents grew up (partially in my mother's case, since she's half-southern) in NJ, so they are all about egg creams. I used to hate them growing up, but I've changed my mind. :)

When I try a new ice cream place I always have to have french vanilla or vanilla bean. You can tell a lot by how someone makes vanilla. I generally don't like a chocolate base for my ice cream, but I do love this muddy river. Mmm.

Congratulations to Mr. Stoney! Well deserved, I'm certain.

And Mmmm, guacomole. I had an avocado last week with a tomato, mozzarella and some fancy balsamic vinegar. The tomato could've been riper, but it was still mighty tasty.

LOL, my Mom has a cocktail every day at that hour. She's 75 and retired, though, so no need to keep up appearances.

I'm lol'ing at them saying a hard G in el gigante. That food is RIDICULOUS.

Sopapilla cheese cake sounds like it should be in my mouth. IN MY MOUTH. (You can make the taquitos up to the point of baking them and freeze them. Then just pop them in the oven and tack on another 5 minutes. YAY.)

Oh MAN Am I so glad you posted that recipe! The boyfriend is really into Mexican food right now and all I can make are tacos, quesadillas and enchiladas! Thank you, Thank you!

Also, your glee cocktails make me wish I like cocktails. Maybe if I make myself drink them enough I'll force myself to like them, similar to what i did with beer. Hmmm.

You are welcome! They're kinda cheater taquitos with the cream cheese, but they are so tasty, no one will care. And you can make them up to the point of baking and freeze them! That way you can always have some on hand (just pop them in the oven and tack on 5 minutes.)

Oh, don't make yourself, if you don't like something, that's legit, imo. (I wonder what it is about cocktails you don't like, though? Just the alcohol taste? Or are you getting crazy martinis that have mixer?)

Anything that's easy to make and delicious is a win in my kitchen.

I've probably just had bad cocktails (I've only had 2) but mostly it's the hard liquor taste, I think. I'm open to try some of your recipes, though. They sound delicious. And hey, I used to hate beer, but now thanks to my bf, I've almost completed a world tour at Old Chicago and I don't regret it!

Yeah, I'm guessing you've had "so you want to smell like gin!" cocktails. I've got a recipe for margaritas that's pretty outstanding. It's very refreshing and lime-tasting, not booze tasting. You should give a mojito a try - that's something that ANYONE can like, promise.

I will definitely use this recipe for taquitos. They sound delicious and just as important for me, not hard to make!
