Even Ivan the Terrible cringed a bit
Nov. 12th, 2012 11:34 amDUUUUDE. The Walking Dead. Good lord, that show is GRIM. It makes Oz look like an After School Special at times. Wow, I am going to need people to come over and talk to me about this episode because GOD.DAMN.
Also up at HDJM: Dexter, Supernatural, and Teen Wolf later today. (I have fallen into a Sterek-sized hole, it seems. I'm just into S2 now. Guilty pleasure tv!) Tonight is the Real Housewives of Beverly Hills, which I adore, and look. I need distractions, okay? I need to keep busy, and this is a great way to do so.
I hope everyone had a good weekend. It is FREEZING here (literally, it was 28F this morning when I finally got up) and should barely get into the upper 50s with sunny skies. It's about damn time fall decided to show up! Bread-baking weather, for sure. Or a cake. MMM, CAKE.

Date: 2012-11-12 06:09 pm (UTC)I used all white sugar instead of brown. The instructions are a little vague. So, when you get to step two:
In a medium saucepan over medium heat, combine sugar, brown sugar, butter and evaporated milk. (That works just fine)
Bring to a boil, stirring constantly, and boil for 7 minutes. (You do NOT have to stir constantly. Stir enough that it doesn't scorch on the bottom, but constantly is a bit much, and it takes longer if you do it constantly. Ignore the part about boiling for 7 minutes. Boil until it reaches soft ball stage, which is 235-240 degrees.)
Remove from heat; stir in marshmallow creme until well incorporated and melted. Stir in peanut butter and vanilla until smooth; spread in prepared pan. Let cool before cutting into squares. (Also, no problems here.)

But oh man, you should DEFINITELY bake bread, maybe with sunflower seeds in it. That would be scrumptious.

It's funny you mention seeds, because I was eyeing my old Pumperknickle recipe.... (Sunflower seed bread is my all-time fave, though.)

You may have your own recipe for hot chocolate but here is mine anyway
Date: 2012-11-12 10:36 pm (UTC)I hope you and your family are doing better this week. I have a recipe for hot chocolate for all of you. I tried to adjust it so that it can serve your whole family at once, but feel free to tweak as needed.
(Serves about 5, each serving is about 1/2 cup with 1 oz of chocolate per 1/2 cup milk)
2 1/2 c lowfat milk
5-6 oz unsweetened baking chocolate, finely chopped
Honey to taste
1 1/2 tsp cornstarch mixed with an equal amount of milk ("slurry")
(You can replace the baking chocolate+honey with 60-72% bittersweet/dark chocolate.)
Heat milk until simmering and add the slurry. Simmer until mixture is a little thickened. Take off heat, add in chocolate and stir until chocolate is melted and well combined (mixture should thicken up at least a little at this point). Add in honey to taste. Let cool for a few minutes. Garnish and serve.

2. Smile nicely at server and decline all menus 'cept wine and dessert, thank you.
3. Order glass of wine while pondering dessert menu.
4. Order anything with descriptions like decadent, double-chocolate or explosion. Also acceptable: thousand layer and volcano.
5. Get another glass of wine, and hell, order a second dessert to take home.
6. Go home feeling not a bit guilty because red wine and dark chocolate are heart-healthy choices, y'all.
7. Eat that second dessert, because who do you think you're kidding?
My second favorite recipe is similar, but involves a bakery and drooling on the bakery case.
